Most would agree, it's Mrs.Yoder's homemade pies that are the biggest draw. "The secret is in the crust and the fresh fruit fillings," says Mrs.Yoder. She insists on using only the best and is very "picky" about all her pies, with over 25 varieties to choose from.

Pie Making Secrets
Glass pie plates work the best. Prevent an unbaked pie shell from puffing up as it bakes by pricking the pastry thoroughly after it has been placed in the pie plate to allow steam to escape. For one-crust pies such as pumpkin or pecan where the filling is baked in the shell, do not prick the crust because the filling would seep under the crust during baking.
Pies containing eggs should be refrigerated. Pie shells can be frozen unbaked or baked. Frozen unbaked shells will keep two months and baked shells four months.
