Lemon Bars

Crust Ingredients

2/3 cup Butter
½ cup Packed Brown Sugar
2 cups All Purpose Flour 
2 tsp Fresh Lemon Zest

Filling Ingredients

2 ¼ cup Granulated Sugar
½ cup All Purpose Flour
¾ tsp Baking Powder
6 Eggs
½ cup Lemon Juice
2 tsp Fresh Lemon Zest
Powdered Sugar (for garnish)

Instructions

  1. Preheat oven to 350 degrees. Line a 9x13 pan with heavy foil. Use enough foil to create an edge around pan, you will use it to lift out bars.
  2. For Crust, in a large mixing bowl, beat butter and brown sugar on medium/high until combined. Beat in flour until crumbly. Stir in lemon zest. Press evenly into bottom of prepared pan. Bake approximately 15 min. or until slightly browned.
  3. For Filling, in a medium bowl, combine the granulated sugar, flour, and baking powder until fully combined. Mix in eggs and lemon juice until smooth, stir in lemon zest. Pour over hot crust and bake approximately 20 min. or until edges are browned and center is set. Remove from oven and let cool for 1 hour. Refrigerate 2 hours.
  4. To Serve, sprinkle evenly with powdered sugar. Lift from pan using foil, cut into bars and store covered in fridge up to 3 days.
