Chef John's Baked Beans


1lb White Beans/Any Beans
 ½ lb Bacon torn into pieces
1½  Cups Ketchup
½  Cup Yellow Mustard
3 Cups Brown Sugar
2 Tbsp Salt
1 Cup of Dehydrated Onions
1 Tsp Cayenne Pepper
2 Tbsp Chili Powder
Water- enough to cover beans


Soak beans overnight in fridge. During this time the beans will double in size.
The next day, drain and rinse beans. Using enough water to cover beans, simmer with a little salt for about 45 min. Once the beans are tender, drain the cooking liquid. Set aside about one quart of the liquid in a large bowl. 
Take the reserved cooking liquid and combine brown sugar, ketchup, mustard, salt, onions, bacon, chili powder and cayenne pepper. Add new mixture to the cooked beans and bake in a casserole dish/oven-safe bakeware. Bake the beans at 300 degrees for about an hour and a half, or until the desired consistency is reached.
